Garden tomato sauce

After harvesting from the garden yesterday, we had a lot of produce to process. First up? Tomato sauce:

Alton Brown has a great recipe that you can see in full at the food network. We didn’t actually follow the exact measurements – just the general steps:

  • Halve and de-seed the tomatoes. We didn’t bother de-seeding the cherries.
  • Arrange on baking pans and sprinkle with olive oil, garlic, salt, pepper, oregano and thyme.
  • Bake at 325 until well cooked (1-2 hours). There may be black from the caramelization, but make sure not to char them.
  • Broil for 5-10 minutes to caramelize a bit more.
  • Blend into oblivion.

    that looks incredibly good….did you use the not quite ripe ones as well?

    Yes, those are some green ones mixed in. Might have given the sauce a little extra tang.
